The Wood Ear Mushroom is an edible fungus which is found growing on dead and living wood year round. The fungus has a propensity to grow on Elder. Shaped like an ear, the fungus is generally brown in colour. The Chinese enjoy the fungus in a variety of dishes, especially hot and sour soup.
