Vintage sepia enhanced photo of jibaro eating rice and beans the staple food of Puerto Rico. This old photo taken by photographer Edwin Rosskam, while working for the US Office of War Information...1938. When there was enough money available, a few pieces of dried codfish (bacalao) were added for flavour. Every ingredient was imported from the continental United States.
