Fez, Morocco, is one of the country’s most historic and culturally rich cities, often referred to as its spiritual and intellectual capital. Founded in the 9th century, Fez is home to Al-Qarawiyyin University, which is recognised as the world's oldest continuously operating university. The city’s heart is the Medina of Fez (Fes el-Bali), a sprawling, maze-like UNESCO World Heritage site filled with narrow alleyways, bustling souks, and ancient mosques. With its mediaeval charm, the Medina remains largely car-free, transporting visitors back in time as they wander through its vibrant streets, lined with artisan workshops, spice markets, and stunning Moorish architecture. One of Fez’s most iconic sites is the Chouara Tannery, where leather is still processed using traditional methods that date back centuries. The view from the surrounding terraces offers a colourful and unique scene of workers treating hides in large stone vats filled with natural dyes. Fez is also famous for its intricate zelij tilework, grand doorways, and beautifully preserved madrasas, such as Bou Inania Madrasa.
