Fez, Morocco, is one of the country’s most historic and culturally rich cities, often referred to as its spiritual and intellectual capital. Founded in the 9th century, Fez is home to Al-Qarawiyyin University, which is recognised as the world's oldest continuously operating university. One of Fez’s most iconic sites is the Chouara Tannery, where leather is still processed using traditional methods that date back centuries. The view from the surrounding terraces offers a colourful and unique scene of workers treating hides in large stone vats filled with natural dyes. Fez is also famous for its intricate zelij tilework, grand doorways, and beautifully preserved madrasas, such as Bou Inania Madrasa.
