Crayfish are eaten all over the world. Like other edible crustaceans, only a small portion of the body of a crayfish is edible. In most prepared dishes, such as soups, bisques and étouffées, only the tail portion is served. At crawfish boils or other meals where the entire body of the crayfish is presented, other portions, such as the claw meat, may be eaten. Claws of larger boiled specimens are often pulled apart to access the meat inside. Another favourite is to suck the head of the crayfish, as seasoning and flavour can collect in the fat of the boiled interior.
Crawfish are freshwater crustaceans. Louisiana has more than 30 different species of crawfish, but only two species are commercially important to the industry; the red swamp crawfish and the white river crawfish. Both market incentives and technological advances have explained the Louisiana crawfish industry to include farming as well as fishing in the wild. On July 14, 1983, Louisiana’s governor approved a law designating the crawfish as the state crustacean. Louisiana thus became the first state to adopt an official crustacean. That's how serious Louisiana is about their crawfish!

January 6th is Twelfth Night, the day that begins the Carnival Season. Mardi Gras 2012 falls on Tuesday, February 21. Mardi Gras 2013, 12th of February, 2014 4th of March and 12th of February 2015. Mardi Gras, “Fat Tuesday”, is the last day of the Carnival season as it always falls the day before Ash Wednesday, the first day of Lent. Most visitors will plan to arrive early so order now before the extended weekend of festivities.
