Poultry and meat stall Photographer: Courtesy of the Seattle Municipal Archives Location: Pike Place Market This is Pike Place Market, established in 1907 as a centralised way to buy farm fresh foods. Before that farmers gouged the public because they had what they wanted, and they were isolated. The competition kept them honest. This butcher was one of their vendors, they had a lot of DIY chicken. You'll note the heads were covered with a bag, this way the chicken won't know where it is, nor how to get back. They had a pretty large assortment of miscellaneous meats, all their juices were sort of allowed to mingle. They were located right underneath dripping chickens that are simply left out in the open, where the heat is. They have a nice assortment of pork, bacon, and what looks like ducks maybe? And of course don't forget the Boneless corned beef, its only 25 cents a pound. During the 1920's to 1930's, the market place was very prosperous. And I hope it was, the thought of bringing home a chicken hanging around in an un-refrigerated area, sounds rather sickening. They had to move them pretty fast.
